Roasted Potato Salad

Baked potatoes, bacon, tangy mustard and barbecue sauce.  A can’t-go-wrong hearty version of potato salad as your next barbecue side dish.

Ingredients
5 pounds roasting potatoes
1 small onion
1 lb. bacon

Potato Oil Coating
1/2 cup olive oil
1 tsp coarse salt
1/4 tsp black pepper
2 tbsp. fresh rosemary, chopped
1/4 tsp paprika
1 tbsp finely chopped garlic

Dressing
4 tbsp whole grain mustard
2 tbsp olive oil
2 tbsp barbecue sauce
2 tbsp apple cider vinegar (Start with 1.5 tbsp, adjust to taste).

Cut 5lb. potato in wedge shapes, then cut each wedge in half.  Add one small onion sliced.

1/2 cup evoo with salt, pepper, paprika and garlic..  Add chopped rosemary.

Prepare potato coating.

Toss with olive oil mixure. Roast at 425 for about 25 minutes, or until golden and crisp.

Once potatoes are roasted.  Let cool to a slightly warm temperature.  Toss with mustard dressing and chopped bacon.
