Melt-In-Your-Mouth Pecan Candy Makes Memories

As a young mother in Pittsburgh I made many friends who, like me, had a real interest in making the holidays special for their families.  We gathered, baking and cooking together while our young children played.  As we traded parenting tips and introduced new recipes to one another, we learned new ways of treating our families and developed our own special holiday traditions.  This pecan candy recipe was given to me a dear friend and mother.  It was her own mother’s recipe.  I treasure it because we mothers have the most influence on the precious Christmas memories we give our families. I hope you enjoy this special recipe as part of our 12 Treats of Christmas.

Pecan Candy

Ingredients:


1 pound pecan halves
2 egg whites
1 teaspoon vanilla extract
1 stick margarine
1 cup light brown sugar
Dash of salt

Directions:

Preheat oven to 250 F degrees.  Put 2/3 of stick or margarine in 10 x 15 jelly roll pan.  Put the remaining 1/3 stick of margarine in a 9 x 9 pan.  Melt margarine in these 2 pans in the preheated oven. Remove pans from oven after margarine is melted.

Using a stand mixer, beat egg whites until stiff.

Add vanilla and salt.  Keep beating as you slowly add 1 cup of brown sugar. Remove the beaters.  Slowly and carefully fold the pecans into the brown sugar mixture.

Drop nut candy mixture by tablespoons into the melted butter.  Bake at 250 F degrees for 1 hour.  Turn candy frequently — the key to this candy is to turn the candy mounds over 4-5 times during that hour.

Cool and store in air-tight containers at room temperature and add these treats to your Christmas cookie trays.
