12 Treats of Christmas: Eggnog Pancakes with Vanilla Glaze

Pancakes + Eggnog = Wonderful Treat or Holiday Breakfast

Eggnog has never been something I’ve sought out much during the holidays.  My husband, however, starts asking right after Halloween if eggnog is available in the grocery store. So, this year, after not really giving eggnog a chance in the past, I found an organic brand of the pre-made stuff and brought it home.  And, well, it hit the spot for me.  I just love the thickness and flavor (it could be that my taste buds are changing or the being pregnant thing).  Then one morning after making my daughter’s favorite breakfast — pancakes — and sipping a small glass of eggnog, the idea of Eggnog Pancakes seemed like a no-brainer to me.

What could be better than sweet and fluffy pancakes flavored with nutmeg?  Those same pancakes drizzled with a doughnut style vanilla glaze.

So, as the seventh treat of our 12 Treats of Christmas, I introduce my Eggnog Pancakes with Vanilla Glaze.

Eggnog Pancakes with Vanilla Glaze

Ingredients:

PANCAKES
1 ½ cups flour
3 ½ teaspoons baking powder
¾ teaspoon salt
3 tablespoons sugar
1/4 teaspoon ground nutmeg (plus more for garnish)
1 egg beaten
1 3/4 cups eggnog
3 tablespoons vegetable oil
1 teaspoon pure vanilla extract

VANILLA GLAZE
1/4 cup 2% or whole milk
1 teaspoon vanilla extract
2 cups powdered sugar

Directions:

Mix all pancake ingredients together until mostly smooth (with a few lumps left) using a mixer or, by hand using a whisk.

Pour onto hot and greased griddle or pan (medium-low heat) in ¼ cup portions, or using a Pancake Pen.

Cook until bubbles come to the surface and begin to break, flip carefully and continue cooking other side until just golden brown.

While cooking pancakes, prep your glaze. Heat milk and vanilla in a small sauce pan until warm (not boiling or steaming).  Whisk in powdered sugar until all the lumps are gone.  Set aside off the heat (but still on the stove top so it is exposed to some heat in order to keep it from fully hardening).

Stack 3-4 fluffy pancakes on a plate, whisk up your glaze again to break up any hardened areas, spoon a few tablespoons over top the pancakes. Sprinkle with nutmeg and serve.
