Easy, Simple & Moist Apple Cake

I have been making this delicious and moist apple cake since my three girls were little.  It is the one of the easiest cakes I have ever made.  Using fresh apples makes this cake a flavorful favorite of family and friends alike.

The recipe below has been adapted from the 1971 edition of the La Leche League Cookbook, “Mother’s in the Kitchen.”   At the time this recipe was submitted to the League Cookbook, canned foods were all the rage.  However, this cookbook differed from others published within the same era because it directed families to prepare meals using fresh ingredients.  Nearly four decades later,  wholesome foods have made a comeback, and as you can see from this recipe, fresh foods are easy to prepare.  This recipe is just one of many examples of easy-to-make foods using fresh ingredients.  It also sets an example for our children that fresh food preparation is easy and tasty.

Fresh and Easy Apple Cake

Ingredients:

4 cups fresh apples, diced, not too finely (I used tart Granny Smith apples to offset the sugar in this recipe)
2 cups white sugar
1/2 cup canola oil
1 cup chopped walnuts
2 eggs, well-beaten
2 teaspoons vanilla
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt

Directions:

Preheat oven to 350 degrees.  Grease a 9” x 9” x 2” square pan with butter or cooking spray.

Although you can certainly mix the ingredients by hand, you may find it more convenient to use an electric mixer.  To begin, combine apples and sugar in a large bowl.

Next, add oil, walnuts, eggs, and vanilla to form a moist apple mixture.  Finally, add flour, baking soda, cinnamon, and salt and mix well to form your cake batter.

Pour batter into your greased pan.

Bake in a 350-degree oven for 60-80 minutes or until cake shrinks from edges of the pan.  Remove the cake from the oven and allow it to cool before serving.

We recommend garnishing the cake with fresh whipped cream or vanilla ice cream.
