The Best and Easiest Pancake Out There

It’s mid-week and I am already struggling with what’s for dinner. So I decided to kill two birds with one stone. Make breakfast for dinner (for the kids), and in turn make breakfast for the kids for the rest of the week and beyond. We do this every so often and the girls just love it. I suppose it is the thrill of breaking the weekday dinner rules, but it is also probably because it is so darn yummy!

So, tonight we made our famous “Great Grandma’s Griddle Cakes”, or as most people would refer to them as pancakes. This super easy recipe comes together quickly and will blow away your notions of what a pancake can and should taste like. This is NOT Bisquick. It is heaven from my Great Grandma’s Kitchen to yours.

As always, tonight I doubled the entire recipe and froze the left overs in freezer safe plastic zipper bags. They heat up nicely in the microwave for a quick warm morning breakfast, even on a hurried school day. No preservatives here or mystery ingredients. No overly processed packaged food either. Enjoy.

Great Grandma’s Griddle Cakes (Pancakes)

Ingredients:

1 ½ cups flour
3 ½ teaspoons baking powder
¾ teaspoon salt
3 tablespoons sugar
1 egg beaten
1 ½ cups milk
3 tablespoons vegetable oil (or substitute with apple sauce)
1 teaspoon pure vanilla extract

Directions:

Mix all ingredients together until mostly smooth (with a few lumps left) using a mixer (or by hand if you happen to have an eager pancake loving ballerina hanging around).

 

Pour onto hot griddle in ¼ cup portions.

Or, if you have a pancake-loving household, get one of these.  A Pancake Pen.  It makes creating shapes and perfect pancakes so much easier. The best $9.95 kitchen item I ever bought.

Cook until bubbles come to the surface, flip carefully and continue cooking other side until golden brown.
