Lemon zest.  The ultimate ingredient.

Awhile back I searched for an ingredient that excited my taste buds.  It had to be simple, accessible, healthy.  I was tired of the most flavorful ingredients coming from those things we later feel guilty about eating.

In comes the lemon.  Specifically, the zest of a lemon.  I like it more than the juice.  It’s a different flavor than the juice and offers that excitement bored taste buds need.  In honor of the lemon, I share with you one of my top 5 favorites – Lemon Zest Pasta.

Lemon Zest Pasta

This recipe is super easy – don’t bother to get out your measuring spoons …  just use the following to your discretion.  The act of making it simple, makes it taste even better.

Ingredients
Pasta – any pasta really.  I like angel hair or spaghetti in particular for this dish.
Olive oil – the good stuff.  The cloudier the better.
Coarse sea salt – so what if you don’t get your daily allowance of  iodine.  You just need a tad and the crunch adds another layer of deliciousness.
Red pepper flakes – just a pinch.
Lemon Zest

Directions:

Boil pasta to desired doneness – al dente is best. Drain and toss with the zest, red pepper flakes, olive oil and salt.

Perfect for a last minute dinner or lunch.  Or, quite honestly, a dinner party.  The simplicity is awesome. And, it’s nice to photograph …
