Watermelon Lemonade Spritzer – The perfect summertime cocktail!

Summer barbeques just wouldn’t be the same without watermelon and lemonade.

For this year’s Fourth of July barbeque, try this refreshingly sweet and sparkling spritzer that is sure to please a crowd.

Watermelon Lemonade Spritzer
makes 2 drinks

Ingredients:


1 cup watermelon, cut into small cubes
6 tablespoons (3 ounces) lemon juice (the juice from 2-3 lemons)
4 tablespoons (2 ounces) simple syrup
3 ounces vodka
club soda

Garnishes:
¼ cup finely chopped watermelon chunks
lemon wheels

Directions:
Cut watermelon into small cubes. Remove any visible seeds.

Juice the lemons, straining out the seeds.

Combine the watermelon, lemon juice, simple syrup and vodka into large measuring cup and puree until smooth using an immersion blender. A regular blender can be used instead if you prefer, but I like the immersion blender because it is super easy to use and requires less clean up.

Pour the puree over ice, top with club soda and gently stir. Garnish with a lemon wheel and some finely chopped watermelon.

If you are having a summer party, make a full pitcher by just doubling the ingredients. Fill the pitcher half way with ice and, for a nice added touch, place several lemon wheels to sides of pitcher. Then add puree and club soda. Top with a few finely chopped watermelon cubes.

If you’d like a non-alcoholic watermelon lemonade for the whole family to enjoy, just eliminate the vodka.
