A Perfect Summer Salad (And Some News)

Well, Summer is officially here … never mind that it has been summer in Florida since about mid-May with daily temps hovering around 90 degrees …

But, let’s just say that the lead-up to summer has been full of excitement around Live Pretty land.  Some of us are moving, some of us are planning great summer trips to the West Coast, and some of us (me :)) are going to have another little set of feet running around the house come January.  Yep, I’m pregnant!

I’m excited and looking forward to snuggling and loving another little baby, but also super sick at all times of the day.  I’m desperately hoping it will pass soon so I can really focus on enjoying being pregnant, but, in the meantime, I find myself not being too adventurous in the kitchen.  If I do not have a taste memory of a food, I won’t even think about eating it.

That is where this salad comes in.  Over the years my family has made this salad for all of our summer gatherings, to take to special picnic events and to share with family and friends who inevitably visit the Florida sun (and our Orlando-area theme parks) over the summer. The combination of spinach, a savory-sweet dressing, dill, strawberries and toasted almonds makes my taste-buds sing. So, without further ado, Live Pretty’s Summer Strawberry Salad.

Summer Strawberry Salad

Ingredients

Salad:
2 bags of baby spinach (about 2 lbs)
1 quart strawberries, hulled and sliced
1 bunch green onions, chopped
1/2 cup chopped  toasted almonds (or toasted sliced almonds)
1/4 cup chopped dill

Dressing:
1/2 cup extra virgin olive oil
1/4 cup sugar
1/4 cup red wine vinegar
2 cloves of garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon Dijon mustard

Directions:

Combine all salad ingredients in a large salad bowl for serving.

Combine all dressing ingredients in a jar or salad dressing shaker, shake to emulsify.

Pour enough dressing over the salad to coat.  Toss together and serve immediately. If not serving immediately, keep the dressing and salad cold and separate until serving.
