Pretty Great Guacamole
Avocados are a Great Source of “MUFAs” and Yummy Too
Last month at the Southeast Produce Council convention, we had the chance to talk with the folks who import Chilean Avocados and really learn a bit more about the health benefits of avocados, and their MUFAs — or monounsaturated fatty acids. MUFAs are considered to be a healthy type of fat (yes, we all need fat in our daily diet). Pronounced “moo–fahs” — MUFAs are plant–based fats found in food like almonds, avocados and chocolate … three awesome things if you ask me.
According to the Mayo Clinic, eating MUFAs may help lower your risk of heart disease, may lower your total blood cholesterol and may also benefit blood sugar control.
So, what’s not to love about avocados? Especially when you can turn them into food like guacamole. So, to help you in your journey to health, here is my favorite guacamole recipe — it’s colorful, has great flavor and is easy to make. Enjoy!
Pretty Great Guacamole
Ingredients:
4 Medium Avocados
4 Limes, Juiced
1 Medium Tomato
1/4 Large Red Onion
1 C Fresh Cilantro
Kosher Salt & Freshly-Ground Pepper
Directions:
Finely chop the onions and cilantro.
Cut the tomato in half, scoop out the seeds and chop into strips (vertically up-and-down each tomato half), then cut strips into small cubes. Combine all three ingredients in a large bowl.
Cut Avocado in half by working around the seed as you would cut a bagel. Once halved, take your knife, insert the blade into the seed using a quick and gentle cutting movement, and use it to twist out the seed.
Scoop avocado out into the bowl. Top with juice from limes, and salt and pepper to taste.
Then get your hands in there and start to break up the avocados and mix the guacamole together until all ingredients are incorporated. (Or use a potato masher if you are adverse to the texture.)
Serve immediately with chips or veggies, or store in fridge with plastic wrap pushed right on top (to prevent browning) until ready to serve.
