Perfect Side for an Easy Weeknight Dinner – Blanched Green Beans

I don’t know about you, but Monday nights are my least favorite night to cook dinner. It always seems like I am beyond exhausted by the time I get to dinner time and that is when take-out seems the easy route to go. But, no, I have to stop myself and try and fix all the calorie damage I did over the weekend.  So – here is my solution: roast chicken (from the grocery store), brown rice tossed with lemon juice and fresh herbs.  Voila … simple and healthy dinner.

Blanched Green Beans
1 lb Fresh Green Beans
Medium Pot of Water
Sprinkling of Salt & Olive Oil to Finish (if desired)

Directions:
Turn pot of water to boil. While waiting for it to reach a full boil, clean the green beans by rinsing in water and trimming each end of with a small knife or kitchen shears.

Once water reaches boil, drop in green beans and turn water down to medium and simmer for seven minutes. Seven minutes exactly until they are bright green and just cooked through.

Drain green beans into colander in the sink and rinse quickly with cold water to stop cooking. Toss with a sprinkling of salt and olive oil if desired. Serve and enjoy a simple and healthy side dish.
