Asparagus & Brie – What Can Be Better for a Celebration

I have had this recipe for several years, only pulling it out on special occasions. Even with only 5 ingredients it is rich, decadent (for a vegetable) and perfect for a celebration like Easter (or any other holiday or special event).  And it is super simple … just a few steps, about 20 minutes and you are ready to share with family and friends.

Now, there is nothing healthy about this dish, but when paired with a beautiful Easter Lamb or leaner main dish, it strikes the perfect balance on the plate.  So, please enjoy my Brie Asparagus Casserole.

Brie Asparagus Casserole

Ingredients –


2 lbs of fresh asparagus
1 small round of Brie cheese
1/2 cup stick melted butter
1 cup panko (or homemade) breadcrumbs
1/4 cup sesame seeds

Directions:
Clean your asparagus by washing in water and breaking off the bottom at it’s natural breaking point.

Blanch asparagus in simmering water for 5 minutes, drain in a colander, or by removing and placing on paper towels.

Slice your brie in long strips (don’t worry about removing the rind).

Mix the breadcrumbs, sesame seeds and butter together.

Place the asparagus heads up in a 9 x 13 inch buttered casserole dish – you are going to do two layers here.

Arrange half of brie over first layer of asparagus. Then place another layer of asparagus over the brie, cover with remaining brie and sprinkle with bread crumb mixture.

Bake at 400 for 6 minutes, broil on low for 2, or until the breadcrumbs have started to brown (keep a close eye here, they can burn easily).

Scoop out and enjoy while warm.
