Game Day Appetizers – Halftime Stuffed Mushroom Caps

Game Day Appetizers:  Save these stuffed mushrooms for Halftime.

Yes, there’s a game on.  As I’ve mentioned before, game day for me is not only about what’s on the TV, but what’s on the table.  Try these stuffed mushrooms as an added treat to the standard wings, nachos, etc.

The Players (as usual, I eyeball measurements, but here’s a guide):
1 package of whole mushrooms.
1/2 cup Panko crumbs
5 slices prosciutto (chopped)
1/2 cup chopped flat leaf parsley
Salt and pepper to taste

Play by Play:

Detach stem from mushrooms.  Rinse, pat dry.  Place upside down on parchment lined cookie sheet.  Place in 350 oven for about 15 minutes to remove naturally occurring juices.  You will see juices puddling under mushrooms.

 

Mix together chopped prosciutto, panko, parsley, cheese. Salt and pepper to taste.

 

Stuff caps with prosciutto & cheese mixture.  Bake on 375 until topping is brown and crispy (about :20 – :30).

 

And for some additional wow – Baked Parmesan Crisps

Simply sprinkle slightly flattened mounds of shredded parmesan on a parchment lined cooking sheet.  Cook until golden brown (about 15 minutes – but keep an eye on them….).  Now potato chips have companionship.
