Spicy Pecans

A simply spicy snack for any party.

These pecans are always go-to for any of our parties – they are great to add to any appetizer spread, put out with cheese and other munchies, or even thrown in a salad.

Please enjoy these at your New Year’s Eve party.

But, just one warning: get them out of your house before starting on any New Year’s Resolution diets.  Trust me, they are a bit addictive :-).

Spicy Pecans

Ingredients
2 large egg whites
1 1/2 tsp salt
3/4 cup sugar
2 tsp Worcestershire sauce
2 T paprika
1 1/2 – 2 tsp cayenne pepper (use 1 1/2 tsp if you are not into spicy stuff)
5-6 cups pecans halves (use 6 if they are small, 5 if they are large halves)
6 T unsalted butter, melted and cooled

Directions:

Preheat oven to 325 degrees F. Line large baking sheet or jelly roll pan with parchment paper.

Beat egg whites with salt until foamy (I use a large bowl and whisk for this, no need to mess with the mixer).

Add sugar, Worcestershire, paprika and cayenne. Whisk until combined.

Fold in pecans and melted butter.  Stir until all pecans are coated.

Spread on your lined baking sheet and bake 25 -35 minutes, checking pecans and stirring every 10 minutes until the coating fully sticks to the pecans and the aroma starts to fill the house. 

NOTE: these burn easily, so keep a good eye on them.  Once you smell them, they are usually done.  There is no harm in taking them out to check them and returning to the oven for another 5 minutes or so, but once they are burned you might not want to serve them.

Place them on top the stove to cool, stirring every few minutes until completely cool.  Then serve and enjoy!
