12 Days of Christmas Cookies: Day 4 – Lemon Cheese Pressed Cookies

On the Fourth Day of Christmas, My True Love Made for Me: Four Lemon Cheese Pressed Cookies

Yesterday we introduced you to our love for the cookie press with our Christmas Tree Press Cookies.  Today, we have another awesome pressed cookie for you on our 4th Day of Christmas Cookies – The Lemon Cheese Pressed Cookie. These simple beauties are like little bits of lemon heaven. Each bite melts in your mouth. A crowd pleaser for young and old alike.

Lemon Cheese Pressed Cookies

Ingredients:
1 cup unsalted butter
6 ounces Cream cheese
1 cup sugar
1 egg, beaten
1 tablespoon lemon juice
1 teaspoon grated lemon rind
2 1/2 cups all purpose flour
1 teaspoon baking powder
Chocolate Chips & Colored Sprinkles to decorate

Cookie Press (Like this Wilton Cookie Press we used)

Directions:
• Blend butter and cream cheese in mixer.


• Add sugar and blend thoroughly.


• Add egg, lemon juice and rind.
• Blend well.

• Blend flour and baking powder in a large bowl.
• Add to cream cheese mixture and mix until smooth.


• Chill dough 30 minutes.

Heat over to 375 degrees F.
Force dough through cookie press onto ungreased baking sheets.


Decorate — we used a flower-like shape (one of many you’ll find in a cookie press package), and decorated with one chocolate chip in the center and sprinkles.

Bake for 8 to 10 minutes, or until slightly browned.


Makes about 5 dozen 2” cookies.

    Just wondering if it’s 6 oz of cream cheese or 3 oz?

      Our recipe includes 6 oz, the older one includes 3 oz. The 6 oz makes them taste so good :-). Let us know how they turn out!
