Halloween Dinner For the Adults – Roasted Squash Soup and “Just-ask-Jack Cranberry Cibatta Bruchetta.”

We all know Halloween is about the kids.  From the costumes to scheduling the trick-or-treating, the day is consumed.  But you can have your candy – and dinner too.

In our house, we need a dinner that’s pre-made and ready to go – and ready to accommodate any schedule (and the schedule of A Girl Pirate and Repunzel).  We’ll sometime just make chili so you can eat it as you come and go from trick-or-treating.  This year, we’re making a Roasted  Squash Soup.  And, because we can’t leave well enough alone, we’re making over-sized seasoned croutons and a spiked cranberry relish.  That, with the seasonal ale, or rich, oaky chardonnay and you’ve got dinner.

Here’s how it’s done.

The Ingredients:
1 med-size Butternut squash
2 Acorn Squash *Note:  I microwave the squash for about 4-5 minutes to make it easier to cut in half.
1 med-size sweet potato
Olive oil, coarse salt and pepper to taste.
3 cups chicken broth
1 15.5-oz can of white cannellini beans, drained
1/2 loaf Ciabatta bread

Directions:

Cube and place vegetables on a parchment-lined roasting sheet.  Toss the veges in olive oil, salt and pepper.  Roast the vegetables for 30-40 minutes at 400 degrees.  You’ll want a crisp roasted look to the vegetables.

 

Place the beans and about 2-3 cups of the roasted vegetables in a food processor. You’ll want to process enough to get the consistency of creamy mashed potatoes (albeit there’s not a drop of cream in this recipe – as the processing of the beans and veges give it the creamy texture you get with cream).  Process remaining vegetables and place in soup pot in batches.

Add 3 cups of chicken broth to vegetable and bean mixture.  Because you seasoned the vegetables during roasting, you may not need to season the soup itself.  Cook for about 30-40 minutes on low heat.

Over-sized Croutons

While soup is on, slice or cut bread as desired.  I liked the over-sized crouton approach, as well as the slices. Toss with olive oil, salt, pepper and a dash of oregano. Cook at 400 degrees for about 7-10 minutes.

 

“Just-ask-Jack” Cranberry Relish
1 bag of cranberries.
Follow cranberry sauce recipe provided on bag.
Add 2 tablespoons Jack Daniels whisky and 2 tablespoons of fresh orange juice.
Sprinkle of coarse salt and coarse black pepper. Cook as directed.
