Sunday Mornings Recipe – Kids in the Kitchen

Sunday Mornings – My time to get the kids in the kitchen and have fun.

The scene:  Children are up wanting breakfast, and attention.  I get up because I find it hard to sleep in.  My bride, however, has no problem sleeping in – given the chance.

Today, I suggested muffins and enlisted the help of the little ones.  They are extremely eager to assist.  We measure, count and read the ingredients together (although I double check when my little reader tells me I need a pound of flour…).  Fun, and learning. Second, is my attempt to make everyone happy with the type of muffins we make.  Plain, please.  Chocolate, please.  Oh, and cinnamon. Not a problem, I make a base muffin recipe, and then divide it up to accommodate the various requests.

Muffin Recipe:
1 3/4 cup all purpose flour
1/3 cup sugar
2 teaspoons baking powder
1 egg beaten
1/4 tsp salt
3/4 cup milk
1/2 teaspoon vanilla
1/4 cup cooking oil (I would add 1 teaspoon of extra oil or applesauce next time….).

Muffin versions:
– Plain and simple:  Just load the batter about 3/4 full.  Done.
– Cinnamon:  After I had my plain muffins set aside, I put a teaspoon of cinnamon in batter and remixed. Then, loaded the batter in more muffins slots.
– Chocolate Cinnamon – Filled muffin tin 1/2 with batter.  Then, placed a teaspoon of melted chocolate.  Topped with remaining muffin mix.  Done.
– Streusel topping – combined 3 tablespoons flour, 3 tablespoons flour with 2 tablespoons butter.  Mixed until I had a crumble texture and placed on top of some of the muffins.

Now, we had a selection.  Albeit the ones they fought over were the plain…..Geez.
