The Big Game Food: Cilantro Lime Rice
To foodies, the day of the Big Game has become a reason to experience with appetizers and snacks that disrupt the conventional chips and beer (although, there’s nothing wrong with those on the table). In honor of the Bowl, here’s a quick, bowl-oriented appetizer that adds a little something different to this year’s grazing table.
Super Rice Bowl
Prepare any white rice as you normally would. I’m a fan of the non-sticky, light rice. While some of you may cringe, the boil-in-a-bag works great for this. Offers that style of rice perfect for this recipe.
To the rice, add the zest of lime. Depending on the amount you make, zest to taste. For about 6 servings, I would add zest of one lime. Note about zesting: Zest just the top layer of peel. You don’t want to zest too deep as the peel gets bitter.
Using the same lime, add the lime juice. Again, to taste. You will find that lime can be an awesome addition and the amount can be subjective. Start with less and add according to your preference.
Add fresh cilantro – Typically, for 6 servings, 2 tablespoons of fresh chopped cilantro is fine. But again, add to flavor. Start with less, add more according to your preference.
Toss. You’ll want to make sure the cilantro is distributed. Salt to taste.

Grilled chicken (chopped), black beans, grilled fish, flank steak, grilled vegetables and chips.
