Simplicity – Eat, Pray, Love Inspired.

Looking for an easy, yet gourmet-esque lunch or dinner?  Got it.

The most memorable scene for me in Eat, Pray, Love is the ‘anti-pasta’ scene.  The simplicity of the dish caught my attention and the next night a similar version was on our table.

Partnered with a nice bottle of Chianti, this dish was simple, but allowed the flavors of each element to make you slow down and take notice.

Easy Elegance

Drizzle the following with intense olive oil (cloudy, first-pressed virgin) and sprinkle with course sea salt.

Asparagus – boil, blanch, then a quick roast

Cantaloupe – cubed, or wedged

Hard parmesan

Mixed marinated olive selection

Prosciutto

Hard-boiled egg

Anticipation

Sit back.  Infuse your favorite tunes into the background. Relax and enjoy the flavors.

Once you slow down, you allow yourself to taste what each element has to offer.
