Raise a Glass!

If you’d like a pre-midnight toast cocktail or if you are one of those crazy people that has leftover champagne after the ball drops, try one or both of these champagne cocktails.

(makes 2 drinks)

Ingredients-

3 oz. gin

1 oz. simple syrup (2 tbsp)

2 oz. of lemon juice (1 lemon)

Champagne

Orange wedge

In a cocktail shaker filled with ice, combine 3 oz. of gin, 1 oz. of simple syrup* and juice of 1 lemon (approximately 2 oz.) and shake until chilled. Then divide mixture into two champagne flutes and top it off with champagne. Garnish glass with orange wedge and enjoy.

Champagne Cobbler

Champagne Cobbler

(makes 2 drinks)

Ingredients –

2 oz. of lemon juice (1 lemon)

2 oz. blue curaçao

Champagne

Orange wedge

No cocktail shaker required! Squeeze half a lemon into each champagne flute. Pour approximately the same amount of curaçao. I went with blue but any color will do.  Again top it off with champagne and garnish with an orange wedge or just toss it in if it doesn’t stay on rim.

* Simple Syrup is easy to make and is good to have around at all times. Just measure out equal parts sugar and water.  I usually make it in batches of 1 to 1 cup. Pour into pot over stove and stir at a low/medium heat for about 10 minutes or until the sugar melts and the mixture thickens a bit. Then remove it from the heat, cool for a few minutes, stir again and pour into a reusable bottle and store in fridge.
