Live. Prepared.

It’s started – the “December Descend onto RoseddyWorld. Whether its friends in from out of town, local friends stopping by or the annual cookie making event, the constant flow of traffic is here.  The collection of events seem to pass the time, and before you know it, it’s lunch time, or dinner time – or we’re just hungry for a snack.  Chances are we can’t squeeze in meal prep. So, I was thinking – how can we live prepared for such days. Here for the holidays -Casseroles.
First – don’t give casseroles a bad wrap.  They are not just full of left-over peas and carrots (while those are just as good).  They can be gourmet creations, with powerful palette pleasing features.   Made days ahead, you can use them for a planned meal, or to satisfy that hungry guest that is nibbling at everything on the counter.  They are perfect as you are standing around having a glass of Merlot at 2:00 p.m. on a Saturday after the 10th dozen of cookies is complete.  “Hey, is there any more that of that bacon, noodle, thing of deliciousness?” It’s either being said, or you’re thinking it.
The possibilities are endless – whether it’s the ole standby of baked chicken casserole (with a hint of sage and all spice) or burger and pasta creation with a Merlot sauce, or a layered vege Parmesan creation – a casserole can do the trick.  And, can be quite impressive as they get better with time.
Let’s see what kind of prepared deliciousness come our way this season…we’ll share of course.
